Although it has had a presence in Chile for the last few decades, Viognier is one of the least-explored white wines in the country. Viognier is a variety that buds early and with an average maturation period. It needs warm climates and good exposure to sunlight, yielding good results in granite soils. In contrast to the well-known Sauvignon Blanc and Chardonnay, it is a variety that does well in the heat and enjoys a more potent and oily body. Fresh and intense, its spiced notes make Viognier a very versatile companion for myriad summer recipes. It is very versatile on the table and can even be paired with heavier meats such as pork.
